The reason why it's bugging you is because you're thinking about it too much.
1) the bride doesn't give a shit about whether or not the police reports consider an unborn baby a person or not. SHe does and she's the one doing the counting.
2) they attempted to kill 10, and were only successful at killing 9, the 8 members of the wedding party, the bride and her child. Now, they thought she was dead. Just because they thought she was dead does not mean they were successful. Success here would mean she was dead and no movie.
3) She doesn't know her kid is still alive. Again, the bride is doing the counting.
Don't think about it so much and enjoy the violence and blood.
