I stayed at Mandalay Bay. It was awesome.. but the location was a little far out. But so are both of the ones you are talking about.
Personally, for the price and the 'fun' atmosphere... I'd stay at the New York, New York.
I could have had a suite for what I paid for a standard room at Mandalay. Of course, a standard there is fabulous.
But the food in the hotel was way overpriced.
You could get away with cheaper food for snacks and quick meals in NY, NY.
I liked the Paris, too.. and where the paris is located.
