Sometimes they aren't dead, they're just gone 'cause their kid is a freak.
Regular everyday parents just wouldn't be interesting. Therefore, their death tales or tales of abandoning make for good plot devices. Every once in a while the parent issue is a secret until it is exposed that their mother is say, oh i don't know, Mystique.
