What you're thinking of is "Shadow Of The Vampire" starring John Malkovich & Willem Dafoe. It was a movie about the making of Nosferatu (not a factual one though).
There was a Nosferatu remake years ago w/Klaus Kinski (I think).
I saw Shadow and it's pretty good. I suggest watching it.
