"Rushmore" has a commentary track by Owen and Wes (if I remember correctly, they're not actually together, but recorded separately and edited together, like many other Criterion discs I own), the three shorts from MTV that year from the "Max Fischer players" ("Armageddon", "Out of Sight", and ... some ... third thing ... possibly "The Truman Show"), and a really long interview by Charlie Rose of Bill Murray (great) followed by Wes Anderson (redundant). I think there's also some storyboard stuff of some kind. But there is none of the cut footage, which seems weird to me. None of the stuff is great ... but then, I don't think the movie's great either, so I could be wrong.
Also, FYI, there's talk that Criterion will soon be doing one for "Bottle Rocket" and "Tanenbaums" as well. Either way, the "Bottle Rocket" disc offers nothing, so I'd assume there will at least someday be one with a commentary track (not to mention the fact that there are supposed to be about an hour's worth of cut footage from that movie, so maybe they'd include that).
