On some occasion, I'm sure movie makers *choose* to give the fans what they want, and on others, they're just trying to tell the story that they want to get made. I'm not sure why every 20-something year-old thinks they're smarter than George Lucas, or could tell a better story....it takes a lot of years, a lot of experience to get where George Lucas is.
