I promise, it's not a mistake. It's a joke. It's funny.
The reference in JAY AND SILENT BOB STRIKE BACK was a continuation of that joke. We were supposed to see both as humorous and the one reminding us of the humor of the previous one.
I believe, if we want to get down to boring nuts and bolts - and I have no idea why we do - that the Amy and Silent Bob thing really happened to him, that Jay had never heard the story before the diner in CHASING AMY and then said his line about the gay story to cover his own ignorance. That about sums it up, but it's far more pedantic than there's a need for.
