Why would Lee and Carlin be on the commentary?

They are hardly in the movie. I mean, I love them and all, and I love Lee's commntaries, but I don't know what they would talk about during the commentary.

A separate Girls commentary would be pretty cool though.

And a two-hour documentary? The movie wasn't that long (at least it didn't seem like it). Seems like overkill. And a commentary on a documentary would be too much as well, since a documentary is a visual commentary in a way (telling the behind-the-scenes stories).

Besides, the chances of a 3-disc set for a flat-out comedy are slim to none. They reserve that kind of treatment for the serious stuff.
