It's called seamless branching and I believe the X-Men DVD and The Abyss both have it. The problem with that is usually, the film itself has not been properly mastered on deleted scenes (watch X-Men and you'll know what I mean). Also, there's scoring and other sound that probably wasn't finished. I agree though ... it would be nice.
