I had kicked around various theories about why she would let him keep thinking she was still a virgin and this was one of them. I also wondered if at times she felt a little fragile about her sexuality, as in would she be defined as a lesbian or not, and so she sort of denied her past history in order to better fulfill the expectations of those she told she was a lesbian. From what I've seen they're seems to be a certain disdain, both from people gay and straight, for bi-sexuals. So maybe she was trying to shape people's impression of her so as not to be constantly told, "Oh you're not gay, you're bisexual." (imagine the snotty tone for yourself).
