But, that has already been done. To answer your question about Clerks ever being made into color and the rest in black and white, NO! Clerks was made in black and white because it was supposed to be more of an effect from a security camera and it was MUCH cheaper to make. Why not the same for Mallrats, Chasing Amy, and Dogma you may ask? Well, because they were not in one place like a Quik Stop through the {nearly} entire movie.
