The 2 disc set is a better option, because as much as a DVD can hold, it can only hold so much. Fight Club is an example of this. It had FOUR commentary tracks on the first disc, so there really was no room on it for anything more. It had essentially used up almost all of those layers on the first disc. Plus, the inclusion of a second disc gave them space to do cool things like multiple angles and commentary on deleted scenes, and production shots. The better the quality, the more space.
If Dogma is to be the spanking disc we have heard about, then it will need a 2nd disc, if not for the 2 promised commentaries, but for the 100 minutes of cut footage we have heard about. Fight Club was such a cool disc because even the packaging looked cool. You have the option to buy the one DVD version, but I'm a superficial person and really go for the eye-candy :P
