I won't even try and answer this. I thought of it during the film and came up with a few ideas...but I have a feeling it'll be one of those mystery type things.

This, on the other hand, I have a theory for. Bear that in mind...it's just a guess.
Essentially we see no evidence that Bartleby can read minds whatsoever. He is merely extraordinarily observant as a result of who he is. Therefore he sat in the car and immeditately picked up on the guy having the wedding band, and the girl not. He knew Loki would never notice it because Loki was all about action and Bartleby was all about inner thought. Until he snapped.
